- Peanut Masala: Roasted peanuts in coconut oil and chili, balanced with fresh ingredients and a crunch from pomegranate.
- Chemmeen: Marinated shrimp with green mango, herbs, and a spiced sauce, offering depth and warmth.
- Kozhi: Crispy chicken thigh glazed with tamarind, paired with roasted carrot purée.
- Beef: Slow-cooked glazed beef served with flaky porotta and a variety of rich accompaniments.
