Chef Jacob's cooking sits at the intersection of two food cultures: the Vietnamese dishes he grew up with and the seasonal, coastal cuisine of his native Maine. That dual upbringing, paired with years spent in New York's fine dining scene, shapes his approach today — familiar Vietnamese flavors made new through what's in season and what's accessible. His background includes Di An Di, Eleven Madison Park (3 Michelin Stars), HAGS (James Beard Semifinalist), and Oxalis (1 Michelin Star).
Hosted on our 3.2-acre rooftop farm in Sunset Park, the series brings together Michelin-trained chefs, seasonal produce, and thoughtfully paired beverages for a communal dining experience unlike any other in New York City.
