Mole, or Molli, derived from the Nahuatl word for sauce, is a delightful blend of seeds, plantains, chiles, tortillas, spices, and more. Each mole tells a story with its unique colors, textures, and flavors that vary from region to region.
About the Chef
Jonathan Perez turned to cooking following a life-changing injury, leading him to culinary school and the establishment of his successful taqueria, Macheen, originally a pop-up that now resides at Milpa Grille Restaurant in Boyle Heights, Los Angeles.
