Shravan: A Seasonal Supper at Indique
Every year, Shravan marks the arrival of the monsoon season in many parts of India. In my home, it was also a time when the cooking changed almost without anyone talking about it. Meals became simpler, lighter, and centred around vegetables, grains, dairy, and legumes. Some families also choose to cook without onion and garlic during this month.
While Stockholm's August couldn't be more different from Mumbai's rainy season, this menu takes inspiration from the broader idea behind Shravan: food that is seasonal, nourishing, and easy to digest.
This supper brings together a few dishes I grew up eating during this time of year, alongside new courses inspired by the same philosophy.
🌟 Menu Sneak Peek
Pomegranate Chutney with Millet Crisps: a bright, sweet-tart accompaniment that's just as good spread on a crisp as it is spooned onto everything else on the plate.
Raw Banana Cutlet with Koshimbir: crisp spiced banana patties served with a fresh salad of seasonal vegetables, herbs and yoghurt.
Millet Raab (Ambali): a lightly fermented millet drink enjoyed in different parts of India, known for its refreshing, gently tangy flavour.
